Old gear
Does the old Frost gear have any Value? Like, be able to upgrade to New Cat gear or should it just be Delete ? ( I'm not an enchanter just enchanting )

I could definitely have missed something, but I dont think there is any reason why you should feel you need to hold onto any T9/T10 gear or any of the other iLvl 251/264/etc gear from WOTLK.
At 82 I've replaced now all my WOTLK gear although I did notice while trying to queue for dungeons, even while equipping say iLvl 272 shoulders, my overall gear score according to the dungeon finder dropped a little versus my 251 shoulders (so I guess the enchants and gems and stuff are factored into that). So just in case you're trying to queue up for dungeons sooner than later you might find it helpful to hold on to some of that stuff.
Personally I'll be keepin my T10 shoulders in any case - they just look awesome, I won't wanna part with those. Everything else is or will be gettin vendored...need the cash! still flyin around at 150% speed or whatever the realllllly slow one is

Blizz really should add in an appearance only set of slots like several other MMOs have done (EQ2 and LotRO I know). Maybe in another 2 years
